Savory Roasted Root Vegetables

Ingredients:

  1. 1 large parsnip, peeled and sliced
  2. 1 large or 2 small beets, peeled and diced
  3. 1 medium-sized sweet potato, peeled and diced
  4. 2 carrots, peeled and sliced
  5. 1 Tbsp olive oil
  6. 1 tsp dried oregano
  7. 1 tsp dried rosemary
  8. Salt and pepper to taste

Directions:

  1. In a medium bowl, combine the vegetables with the olive oil and seasonings. Mix until well coated. Transfer to air fry basket.
  2. Put the air fry basket into the toaster oven and set to airfry for 20 minutes. Air fry until vegetables are tender and slightly browned.
