Generously season the beef roast with salt and pepper. Sprinkle the garlic over the roast. Put the lid on the Sous Vide Slow Cooker and insert the temperature probe as close to the center of the roast as possible. Depending on the roast, you may need to set the roast on the included rack so you can get the temperature probe to the center of the roast. Press the Temp Probe button and set the temperature to 140˚F. Press start. The Sous Vide Slow Cooker will stay on until you stop it. The longer you can leave the roast in the Sous Vide Slow Cooker the more tender and moist it will be. Once done, pull the roast out of the Sous Vide Slow Cooker and place on a cutting board. Allow the roast to sit for 5-10 minutes before slicing. While the roast is resting combine the prepared horseradish, apple cider vinegar, mayonnaise, and sour cream in a medium bowl; set aside. Thinly slice the roast and build your sandwich using the horseradish sauce, lettuce and tomatoes. Note: Avoid a chuck roast for this recipe-these tend to be tougher and would not slice as nice for your sandwich.
