Slice the chicken into 1” thick strips and place in the mustard mixture to marinate. Pour the melted butter into the slow cooker and layer in the onions, and sliced peppers. Pour in the chicken and marinade and ½ cup chicken broth. Place the lid on the slow cooker and cook for 2 hours on low. In a medium-sized sauce pan, heat the remaining 2 cups chicken broth over medium-high heat. Add the corn starch and cook until thickened. Add the chicken broth and parmesan cheese to the slow cooker.
