Turkey Thai Meatballs

with Ginger Sauce

Classic meatballs take a unique “healthified“ turn when made with ground turkey and marinated in a sweet Thai ginger sauce. These trendy meatballs can be made ahead of time, then warmed and served with toothpicks as the perfect party starter.

Ingredients:

  1. 3 green onions
  2. 1⁄2 medium white onion, quartered
  3. 3 cloves garlic, peeled
  4. 2 Tbsp. cilantro leaves
  5. 1⁄2 medium red bell pepper, stem and seeds removed, quartered
  6. 1 (20 oz.) package lean, ground turkey
  7. 1 egg, beaten
  8. 1⁄2 cup panko crumbs
  9. 2 Tbsp. soy sauce
  10. 2 tsp. salt
  11. 1/2 c. water
  12. 2 Tbsp. cornstarch

Ginger Sauce:

  1. 1 green onion, finely chopped
  2. 1⁄4 c. white wine vinegar
  3. 1⁄4 c. soy sauce
  4. 2 tsp granulated sugar
  5. 1 Tbsp. honey
  6. 1 clove minced garlic
  7. 1⁄2 tsp. minced fresh ginger
  8. 1⁄2 tsp. red pepper flakes

Directions:

Place onions, garlic, red bell pepper and cilantro in food processor bowl with S Blade. Pulse chop until fine.

Mix ground turkey, chopped vegetables, egg, Panko crumbs and salt in medium bowl. Cover and refrigerate 15 minutes.

Combine soy sauce, water and cornstarch in the measuring jar; stir until cornstarch is dissolved.

Shape turkey mixture into 24 (1-inch) meatballs; place into an 8"x8” baking dish and pour soy sauce mixture over meatballs.

Bake in a 375°F oven 30-40 minutes, or until sauce is thickened and meatballs are cooked through, turning meatballs once during cooking.

Ginger Sauce:
Combine sauce ingredients in medium saucepan. Cook and stir on medium heat 10 min or until sauce is heated through. Serve in small a bowl with meatballs.
