Place Emulsifying Disk in food processor bowl. Add first 8 salad dressing ingredients and pulse 3 to 4 times to combine. With processor running, gradually add oil in a steady stream through feed chute; mix until smooth.
Remove Emulsifying Disk and stir in
poppy seeds.
Divide spinach or salad greens onto 8 salad plates. Top evenly with cottage cheese, mandarin orange segments, strawberries and crumbled blue cheese.
Drizzle 2 Tbsp. dressing over the top of each salad. Garnish with sliced almonds,
if desired.
Cook's Tip: Place salad greens on large platter and serve with the dressing on the side.
