Cold Fruit Soup

Cool down on a hot summer day with this healthy fruit soup, lightened up with almond milk and fresh melon.

  1. 1⁄2 ripe cantaloupe melon, seeded, peeled and cut into chunks (about 3 cups)
  2. 1⁄2 c. almond milk
  3. 1⁄2 c. plain Greek yogurt
  4. 1⁄4 tsp. ground nutmeg
  5. Pinch Salt
  6. 1⁄2 c. jicama, peeled and diced


Place melon in medium bowl. Puree with the Immersion Blender until smooth.

Add almond milk, yogurt, nutmeg and salt. Blend on low until combined.

Top with a tablespoon of diced jicama and a dash of nutmeg before serving.

TIP: Use remaining jicama as a sweet and juicy crunch to any summer salad.
