Steamed Red Potatoes

with Lemon Butter Sauce

  1. 1.5 pounds red potatoes, halved
  2. 2 tablespoons lemon juice
  3. 1 tablespoon lemon zest
  4. 1/2 teaspoon kosher salt
  5. 1/2 teaspoon white pepper
  6. 1/3 cup butter, melted
  7. 1 green onion, cut in fourths
  8. 1 tablespoon fresh Italian parsley
  9. 1 clove garlic, peeled


Preheat the oven to 400°F. Arrange a large square of heavy-duty foil on the counter and coat the top side generously with cooking spray. Place the red potatoes in the center of the foil. Form an edge of foil around the potatoes and set aside.

Place the remaining ingredients in the 20 ounce personal blender jar and pulse until the herbs and garlic are finely chopped. Spoon the sauce over the potatoes and close the foil package tightly. Bake for 40-45 minutes or until the potatoes are tender throughout. Serve the potatoes with any remaining sauce.
