Quinoa Tabbouleh

  1. 1 medium red pepper, diced with dicing blade
  2. 1 medium yellow pepper, diced with dicing blade
  3. 1 large tomato, diced with dicing blade
  4. 1 English cucumber, diced with dicing blade
  5. 1 cup loosely packed flat leaf parsley, finely chopped
  6. 1 cup loosely packed mint, finely chopped
  7. 3 cups cooked quinoa
  8. 1 Tbsp. minced garlic
  9. 2 lemons, juiced
  10. 2 Tbsp. chicken stock
  11. Salt and pepper to taste


Place all ingredients, except garlic, lemon juice, chicken stock and salt and pepper into a large bowl. Toss together.

In a small bowl, mix together the minced garlic, lemon juice and chicken stock. Pour over the quinoa mixture and toss to coat.

Season with salt and pepper and serve.

Note: the longer the salad is refrigerated, the better the flavoring becomes.
