Butternut Squash Fries

  1. 1 large butternut squash, peeled, bulbous end cut off, julienned with julienne blade
  2. 1 tsp. cumin
  3. ½ tsp. curry powder
  4. ½ tsp. turmeric
  5. Salt for seasoning
  6. Cooking spray


  1. Preheat oven to 450°F. Grease a cookie sheet with cooking spray.
  2. In a medium sized bowl, toss together the butternut squash, cumin, curry powder and turmeric. Season with salt.
  3. Spread the fries in a single layer on the prepared cookie sheet and spray with cooking spray.
  4. Bake for 28-30 minutes, flipping halfway through, or until fries are crispy around the edges.
  5. Serve hot.
