Garlic Smashed Potatoes

  1. 2 Tbsp. unsalted butter, melted
  2. 2 cups chicken stock
  3. ¾ tsp. garlic powder
  4. ¼ cup 2% milk
  5. ¾ tsp. onion powder
  6. ¼ tsp. pepper
  7. 3 lbs. small red potatoes, quartered (about 8 cups)
  8. ½ tsp. salt


  1. Wash and scrub potatoes clean. Dry and cut into quarters.
  2. Place the potatoes and chicken stock into the cooking bowl.
  3. Place the lid on the pressure cooker and lock into place. Press the STEAMING button and set the timer for 15 minutes.
  4. When the timer goes off, use Quick Pressure Release.
  5. After all the steam has released, carefully open the lid, remove the potatoes and place into a large bowl.
  6. With a hand masher, mash the potatoes until just broken apart, but not smooth.
  7. Stir in the melted butter, milk, onion powder, garlic powder, salt and pepper. Serve warm.
