Garbanzo Bean Salad

Ingredients:

  1. 1 cup cucumber, diced
  2. ¼ cup cumbled feta
  3. 1 cup dried garbanzo beans
  4. 1 cup sliced cherry tomatoes
  5. 2 cups water

Directions:

  1. In a medium size bowl, add the dry garbanzo beans and enough water to cover the beans. Soak the beans for 5 hours, or overnight.
  2. Drain the water from the soaked beans and place the soaked beans into the cooking bowl. Cover the beans with 2 cups of water.
  3. Place the lid on the pressure cooker and lock into place. Press the BEANS button and set the timer for 35 minutes.
  4. When the timer goes off, use Natural Pressure Release.
  5. After all the steam has released, carefully open the lid and drain the remaining water.
  6. For the dressing: in a small bowl whisk together the lime juice, olive oil, honey, garlic and salt and pepper to taste.
  7. In a medium size bowl, toss together the cooked beans, diced cucumber, sliced cherry tomatoes, feta and dressing.

Honey Lime Dressing Ingredients:
  • ½ lime, juiced (about 2 Tbsp.)
  • 2 Tbsp. olive oil
  • ½ Tbsp. honey
  • ½ tsp. minced garlic
  • Salt and Pepper
