Corned Beef and Cabbage

Ingredients:

  1. 3.5 lb. corned beef brisket with spice packet
  2. 1 (12 oz) bottle stout beer
  3. 1 cup beef broth
  4. 3 Tbsp. minced garlic
  5. 2-3 sprigs fresh dill
  6. 2 sprigs fresh rosemary
  7. 1.5 lbs. new potatoes, quartered
  8. 1 lb. carrots, cut into ½" pieces
  9. 1 head green cabbage, cut into sixths

Directions:

  1. Place the trivet in the cooking bowl and place the corned beef on top.
  2. Pour the stout and broth over the top. Add the included spice packet, garlic, fresh dill and rosemary.
  3. Place the lid on the pressure cooker and lock into place. Press the MEAT button and set the timer for 70 minutes.
  4. When the timer goes off, use Quick Pressure Release.
  5. After all the steam has released, carefully open the lid and remove the corned beef, dill and rosemary and place on a large cutting board.
  6. With the liquid still in the cooking bowl, add the cabbage, potatoes and carrots.
  7. Place the lid on the pressure cooker and lock into place. Press the STEAM button and set the timer for 5 minutes.
  8. When the timer goes off, use Quick Pressure Release.
