Chocolate Bread Pudding

Ingredients:

  1. ¾ cup semi-sweet chocolate chips
  2. 3 eggs
  3. 2 cups 2% milk, divided
  4. 6 cups cubed day old boule or challah, sliced ½" thick
  5. ¼ tsp. salt
  6. ¼ cup granulated sugar
  7. ½ tsp. vanilla extract

Directions:

  1. In a medium saucepan, over medium heat, warm 1 ½ cups milk and the chocolate, stirring constantly, until chocolate is just melted, about 2 minutes.
  2. In a large bowl, whisk eggs, sugar, vanilla, salt. Whisk in the chocolate mixture.
  3. Add the cubed bread to the mixture, and stir to coat bread completely. Let the bread soak until it is saturated, about 20 minutes.
  4. Pour soaked bread mixture into cooking bowl, and pour the additional ½ cup of milk on top. Stir to incorporate.
  5. Place the lid on the pressure cooker and lock into place. Press the MANUAL button and set the timer for 14 minutes.
  6. When the timer goes off, use Quick Pressure Release.
  7. After all the steam has released, carefully open the lid, stir and serve.
