Chilled Spicy Gazpacho Soup

with Garlic Butter Croutons
Absolutely the best refreshment on a hot summer day! Serve in small cups as an appetizer or use the soup as a base for a light lunch or first course at dinner.

  1. ½ teaspoon black pepper
  2. 1 cucumber, peeled, quartered
  3. 1 clove garlic, peeled
  4. 1 cup garlic butter croutons for garnish
  5. 1 green pepper, cored, cut in chunks
  6. 1 jalapeño pepper, cored, seeded, cut in half
  7. ½ teaspoon salt
  8. 3 cups spicy tomato vegetable juice
  9. 2 large ripe tomatoes, cored, seeded, cut in half
  10. ½ small white onion, peeled, quartered
  11. 1 teaspoon Worcestershire sauce


Place all ingredients into the blender jar, except the croutons, and select auto 1. Adjust seasonings, if needed, and chill for at least 1 hour before serving. Add croutons to each serving for garnish.

Cook's Hint: If you prefer a chunky-style soup, reserve some of the chopped vegetables and add just before serving. For a heartier soup, add chilled cooked shrimp just before serving.
