Chicken Tikka Masala

Ingredients:

  1. 1 Bay Leaf
  2. 1/2 tsp Cayenne Pepper
  3. 2 Lbs Chicken Breast, Cubed
  4. 1/2 tsp Cinnamon
  5. 13.5oz can Coconut Lite Milk
  6. 3 Tbsp Corn Starch
  7. 2 tsp Ground Cumin
  8. 1 Tbsp Garam Masala
  9. 2 Tbsp Minced Garlic
  10. 1 Medium Onion, Diced
  11. 2 tsp Paprika
  12. 1/2 tsp Pepper
  13. 1 tsp Turmeric

Directions:

  1. Grease the slow cooker with cooking spray and add all ingredients, except the bay leaf, coconut milk and corn starch to the slow cooker. Stir to combine.
  2. Place the bay leaf on top.
  3. Place the lid on the slow cooker and cook for 4 hours on high, or until chicken is cooked.
  4. In a small bowl, combine the coconut milk and corn starch. Remove the bay leaf and stir in the coconut milk mixture. Place the lid back on the slow cooker and continue to cook on high for an additional 30 minutes.
  5. Serve warm with Nan or rice.
