Spinach Salad

with Citrus Poppy Seed Dressing

Top spinach greens with fresh strawberries and mandarin oranges for a sweet punch, complimented with savory cheese and a light citrus dressing.

  1. 1⁄4 c. agave nectar or honey
  2. 1 lemon, juice and zest
  3. 1 orange or tangerine, juice and zest
  4. 1⁄2 c. canned mandarin orange juice
  5. 1 Tbsp. white wine vinegar
  6. 1 tsp. dry mustard
  7. 1⁄2 tsp. celery salt
  8. 1⁄2 tsp. Paprika
  9. 1⁄2 c. canola or safflower oil
  10. 1⁄2 tsp. poppy seed


  1. 1 c. spinach or salad greens
  2. 1⁄2 c. small curd cottage cheese
  3. 2 Tbsp. mandarin orange segments
  4. 3-4 sliced strawberries
  5. 1 Tbsp. crumbled blue cheese or gorgonzola cheese
  6. Sliced almonds (optional)


Place Emulsifying Disk in food processor bowl. Add first 8 salad dressing ingredients and pulse 3 to 4 times to combine. With processor running, gradually add oil in a steady stream through feed chute; mix until smooth.

Remove Emulsifying Disk and stir in poppy seeds.

Divide spinach or salad greens onto 8 salad plates. Top evenly with cottage cheese, mandarin orange segments, strawberries and crumbled blue cheese.

Drizzle 2 Tbsp. dressing over the top of each salad. Garnish with sliced almonds, if desired.

Cook's Tip: Place salad greens on large platter and serve with the dressing on the side.
