Caramel Nut Tart

Caramel Nut Tart

2 cups mixed toasted almonds, pecans and walnuts,
¾ cup unsifted all-purpose flour
1/3 cup confectioners’ sugar
½ tsp salt
½ cup cold butter, cut in large pieces
2 egg yolks
¾ cup butterscotch caramel topping
1/3 cup heavy cream
1 egg, slightly beaten
1 tsp vanilla extract

In large bowl of A Black & Decker food processor, combine 1 cup nuts, flour, confectioners’ sugar, salt and butter. Using pulse, process until mixture resembles coarse crumbs. Add egg yolks and process to blend. Press against sides and bottom of ungreased 9-inch tart pan with removable bottom. Refrigerate for at least 30 minutes.

Bake in preheated Oven at 350º F for 20 minutes, until edges begin to lightly brown. Remove from oven and place on rack.

Meanwhile, coarsely chop remaining 1 cup nut mixture. In medium bowl, combine caramel topping, heavy cream, egg and vanilla. Blend well. Stir in nuts and spoon into prepared tart shell. Bake 25 minutes longer or until knife inserted into center comes out clean.

Cool on wire rack.

Serve warm with vanilla or cinnamon ice cream.

Makes 8 servings.

French Chocolate Silk Tart

12 chocolate refrigerator wafers, broken into large pieces
3 tbsp. melted butter or margarine
1 tbsp. granulated sugar
¼ cup butter, softened
¼ cup granulated sugar
1 oz. semi-sweet baking chocolate, melted and cooled
½ tsp. vanilla extract

In large bowl of Black & Decker Food Processor, using pulse, crush cookies to fine crumbs. In medium bowl, combine chocolate crumbs with melted butter and 1 tbsp. sugar. Toss to blend. Press on bottom and up sides of 2 4-inch tart pan.

Bake in preheated Oven at 350º F for 10 minutes, until edges begin to lightly brown. Remove from oven and cool on wire rack.

Meanwhile, in medium deep bowl, cream remaining ¼ cup butter using A Hand Mixer set at medium speed, gradually adding remaining ¼ cup sugar. Beat until lemon colored and fluffy. Stir in cooled chocolate. Add egg and beat 5 minutes on medium speed until very light and airy. Spoon into baked and cooled tart shells. Refrigerate at least 4 hours.

If desired, garnish with sweetened whipped cream.

Makes 2 servings.
 

Quiche A Little Lighter


Use one of our Black & Decker Toaster Oven

1 round of refrigerated pie pastry
1 medium red pepper, chopped
2 large shallots, chopped
2 tsp. olive oil
2 ½ cups coarsely chopped fresh baby spinach leaves
2 large cloves garlic, minced
1/3 cup loosely packed chopped fresh basil leaves
½ tsp. salt
½ tsp. coarsely ground black pepper
3 large eggs, slightly beaten
1 cup evaporated low fat milk
2 cups shredded low fat Italian cheese blend

Preheat  toaster oven at 375º F.  Roll out pastry dough to fit 9-inch glass pie plate with standing rim.  Flute edges as desired. Bake the empty pastry shell for 8 minutes.  Remove to cooling rack.

Heat electric skillet to 400º F. Cook red pepper and shallots in oil several minutes to soften.  Add spinach and garlic.  Cook 1 minute to soften spinach.

In large bowl, blend eggs, milk and cheese.  Stir in spinach mixture.  Spoon into partially baked crust. Place in oven and cover loosely with aluminum foil, gently folding edges over crust without touching the cheese mixture. Bake at 375º F. for 35 minutes or until filling is puffed and set.

Cool on rack for 10 minutes before serving.

Makes 8 servings.

Bringing the Family Together in 2011

Did you know that kids who eat most often with their families are 40% more likely to maintain A’s and B’s in school than kids who don’t?[1] They’re also less likely to try drugs and alcohol and more likely to share problems and issues with their parents when they come up.

For these reasons and so many others, people everywhere are making a commitment this year to set aside more time to spend with the family and eat more at home. It can be tricky to do, though—particularly with busy schedules and not enough hours in the day.

Make sure these recipes are liked by your entire family, since will be appearing more than once on the table. They are particularly good for your busy days, since you’re comfortable preparing them quickly.

4. Keep an eye on tastes and trends

To break up the weekday routine of your normal go-to recipes, keep an eye out for new flavors, tastes and trends and use them to inspire you in the kitchen. Often,you can take hot new food trends, like Panini and flatbread sandwiches, and do them quickly and easily at home.

5. Make a big deal out of weekend meals

Aside from having your weekday dinners in order, also look to weekend meals to bring the family together even more. You can use big family breakfasts as a good excuse to get the kids out of bed, too. Also try family pizza or burger nights to make sure everyone  still sits down together in the evening, even though its the weekend.
